If you’re looking for a hearty new recipe and want to go meatless, you’ve sooooo gotta try this! Who needs beef when you have sweet potato? Even if you’re not a big veggie person, mixing sweet potato in with your broccoli is a great way to add pizazz to your meal and still satisfy your taste buds.

Roasting your veggies is super simple and a nice way to meal prep for the week.
Prep 1 large head of broccoli with one large sweet potato
Toss broccoli and sweet potato in ¼ cup of olive oil, ¼ teaspoon seasalt, ½ teaspoon garlic rosemary seasoning, ¼ teaspoon black pepper
Lay flat on a baking sheet (with aluminum foil or parchment paper). Bake at 425 for about 40 minutes.
And that’s it! You can add extra flavor by adding fresh garlic or cumin before baking. Also, I like to drizzle some balsamic vinegar for extra flavor.
