Check out this yummy recipe from my good friend, Dr. Lauren. If you’re not a big vegetable person, mixing sweet potato with your veggies is a good way to add pizazz to your greens.

Roasting your veggies is super simple and a nice way to meal prep for the week.
Prep 1 large head of broccoli with one large sweet potato
Toss broccoli and sweet potato in ¼ cup of olive oil, ¼ teaspoon seasalt, ½ teaspoon garlic rosemary seasoning, ¼ teaspoon black pepper
Lay flat on a baking sheet (with aluminum foil or parchment paper). Bake at 425 for about 40 minutes.
And that’s it! You can add extra flavor by adding fresh garlic or cumin before baking. Also, I like to drizzle some balsamic vinegar for extra flavor.
